How do you turn off Religion?

I noticed that in the advanced options you can turn off Espionage and that some scenarios, like Fall of Rome, have Religion turned off. However I do not see an option to turn off Religion in the advanced settings.

Is there a way to turn this off, and if not is there a mod for the sole purpose of having Religion turned off?

There may be a mod, but one way of doing so is to simply set "start era" to anything renaissance and above.

Of course, this hampers a few civs like the Byzants and Celts

Espionage can be turned off because it's a feature that you have to pay at least some attention to, it's unavoidable. Religion on the other hand can be completely ignored by the player. You don't want religion? Don't get one At some point a civ will spread a religion in your cities, but what do you care

Or disable Gods&Kings in the DLC menu

That's the beauty of religion in G&K, you don't have to do anything. It provides minor bonuses, so it's not game-changing or anything you have to pay attention to if you don't want to.
