I've never built a single coal power plant yet I'm the world's number one producer of co2 and over half my emisions come from coal .How can I see what the sources are that are contributing to my co2? The climate screen is not helpful...

The short answer is that you can't, because that's the magic of Civ VI's UI.

But, you can keep in mind that anything that uses coal, building or units, will contribute (pretty sure about this anyway). And I believe each time you lay down a tile of railroad there is a small contribution to Co2 aswell, though I think it's only once per tile and not ongoing like power plants and units.

Hope this isn't a thread hijack, but: can you reverse global warming if you do a lot of carbon recapture and plant forests? Or does that just stop the damage level where it is?
