I didn't want to un-fortify that guy!

Ok, so when you select a fortified guy, is there a way to un-select him easily without pressing spacebar and skipping his turn, thereby un-fortifying him?

I just double-checked, escape doesn't work (it brings up the menu).

Clicking on other units is a workaround, but I want a keyboard shortcut.

Suboptimal, as you then lose the accumulated defense bonus. Remember, the fortification bonus builds up to max over 5 turns.
 
No you don't you ONLY lose the defense bonus if you Do something that turn (move, attack, ..maybe upgradeor promote as well but unfortifying him and then refortifying him in place changes nothing in the game)

What about when you upgrade a unit and it activates next term. Does it's bonus start again from scratch too?

IIRC, the fortify bonus will start over from scratch when you upgrade to a new unit type, but will not (i.e. the unit will retain all fortify bonus) if you are simply applying a promotion (or even un- and re-fortifying the unit, provided it doesn't move, which is nice to not have to worry about, and also enables you to do what flamingzaroc121 recommends and just un/re-fortify to 'unselect' a unit at the end of the turn (easiest way: hit 'F' twice)).

gamemaster3000, (in case you haven't already,) note that even pressing space to skip a turn, or selecting 'fortify until healed', will all accumulate the fortification bonus regardless - AFAIK the only ways to not accumulate the fortification bonus are to upgrade to a new unit type, move from one square to another, or attack from a square (even if you don't actually move to a new square in doing so). I guess I'm just repeating Krikkitone though now, so I'll stop rambling at this point ... ;)
 
Also, important to note... hitting space bar will NOT make the unit unable to do anything that turn (unlike Civ 3).

If you space bar a unit, you can go back to it later on that same turn (just click on it to select, like normal), and you can still make it move, attack, etc.

If a unit sits in a space over time, it gets the fortify bonus. Even if you hit the sentry button or hit space on it every turn, it's being in one place (and able to get defensive bonuses) that gets the fortification bonus, not the button.
