I'd be up for any of the variants.
It's not hard for the human to get 50K culture, but it would be nice if we could avoid the paradoxical "Our cultural superiority is evidenced by our extensive razing campaigns" finish. Not advocating a strictly passive approach, and may not be practical to make the variant even harder. Although I have won this way on Demigod in RaR (no aggressive wars late).
The Slave and Just Win variants are pretty much the same thing. I tend not to build Slave Markets anyway (Where's Bez when you need him?

), but Emancipation is a real neat wonder for Raze-and-Replace campaigns. Might be the most active variant to play, with forced war and strong incentive to rampage in the mid-IA.
Science in the Capitol only is a neat idea. I'd suggest a Seafaring civ to get a quick coastal capital for a Colossus build. They "fixed" (

) the Colossus to expire on a required tech in 1.04 so it's not as advantageous to the human, but being able to stack Colossus, IP, and possibly Statue of Liberty in the same city (not to mention the Silk Road, Empire State Building, ...) can lead to tiles each producing 6-7 gpt. Industrious might also be a good trait to get free native labor to stand the Capital up quickly. (So ... Carthage?)
I've been having a frustrating time with Deity in RaR. A lot of false starts where a Militaristic Civ decides to use its starting units to make me go poof. Not worth it to game the opponent list, but a need to restart shouldn't be a surprise.
