I don't believe active paleontology is a thing. I guess the dinosaur is the visual representation of a proximity bonus you get for placing your culture district next to say a quarry.
I'd love it if such bonuses always hat a visible hint.
Maybe the museum has slots for two skeletons and each skeleton can be partial or complete. Maybe each slot has two or more sub-slots that need to have matched components, potentially giving another reason for trading.
That depth of dinosaur skeleton building sounds pretty strange to me, though. Is paleontology that important? Maybe it's just one slot and they wanted to represent a museum that has both partial and complete skeletons on display. That's what natural history museums do sometimes, I think?

It'd be in keeping with Theming Bonuses of Great Works.
I remember they said that the Great Works system is pretty spectacular now too. There's that painting icon at the top of the UI. Perhaps now you can look at all your paintings on a museum-wall? be pretty cool to see why your civ has created, at a glance. Although that wouldn't really work for writings & music, so idk
Could be that each tree has certain techvics that help offset the lack of the opposing resource. Like it'd be a duller experience if focusing too heavily on research meant you had no culture game at all, so Radio would let you build Radio Towers for culture. It's in the science tree, but it unlocks a culture building.

Or maybe the great works slot allows for hybrid yields. Like, you can fill the slots with works of art for extra culture or dinosaur bones for extra science. And maybe the university has slots that work similarly with the potential to add culture.

I would not be opposed for some objects to be exclusive to one or the other three, and have certain objects require a civic and a tech (think Civ 4's multiple requirements)
