Reason that we can't pick which building to overbuild?

I don't think there really are any significant trade-offs when it comes to overbuilding, with the exception of influence buildings - the yields lost when overbuilding are so small it doesn't really matter what is being overbuilt imo.

Even the value of influence is somewhat relative - yes, it is the most precious of the tile yields and so I try to delay overbuilding, if I have the choice...however, given that in the 2nd age you can spezialize towns to generate influence (and getting 8-10 influence p.t. for 4 or 5 connections is not uncommon), the loss of two from an overbuild does not have that much impact.

if you could choose to increase that towns influence output by 20-25%, wouldn't you do that? that's what that +2 influence is in relation to your statement.

As I wrote, if I can get easily around overbuilding an influence building (= having a similar spot elsewhere) I will do...but having such buildings is rare in rural towns anyway (and even if I should be forced to do, it doesn't take anything away from the specialization bons - both are flat yields). My statement was more directed to overbuilding influence in one of your bigger cities (where at some point simply space might become an issue) and evaluating the loss in comparison to a fairly easy way to get 10 Influence per turn by spezialicing a town.
