There are already the default options and custom relgions (lion, snake, etc).

Where can we find additional religious icons?
How would they be installed?
Who would be a good person to ask to make them?

For example, if you wanted a new custom religion to be represented by a kangaroo, to whom would we turn?

look at Tomatekh's Historical Religions mod and see how he did it that's what i did

what you need to look at is the .dds files in the Art folder and the Religions_Icons .sql file, all the necessary info to mod religious icons is there. (the rest of the mod is more complex, it deals with creating actual in-game working religions.)

making your own icons in Photoshop is not very hard, though it can be time-consuming
