My guess is that the buildings which generate multiple types of bonuses still only count as a single building type. The Inn is a Food Building which happens to also have a special Happiness side effect. The Pavilion is a Culture building that happens to have a special Happiness side effect. The Dungeon is a production building that has a Influence bonus side effect.Also it seems that the Inn (Food and Happiness Building) does not count for the Temple of Jupiter adjacency (+1 Culture adjacency for Happiness Buildings).
Probably, but then they should only be categorized as "first yield" Building, not both, even if giving both base yields. From a programming standpoint, that’s a much simpler solution (and therefore easier to maintain and less likely to screw up) than allowing buildings to fit into multiple categories. Of course the more complex solution does give more flexibility, but it’s probably not worth the cost.

Where is this screen? Not sure i have ever seen it.It does work for Culture, but not for Gold (neither for the display of yields breakdown, nor for the actual Gold per turn when changing Policies).
It does stack for each City (Settlement?) that has one.

I’ve seen this with some civs. The second building requires that the settlement be a city.It's pretty unclear when the quarters are doing their thing, I'd love some text with base yields plus blue text with bonuses and or adjacency.
Also think I had a glitch with the Spanish quarters in one game, i built about 3 of them, then afterwards, I'd build one of the 2 buildings, then be unable to place the 2nd. It would just be greyed out. Not sure if others have had similar problems with their unique quarters. It only seemed to bug for one game one age. I know the Spanish ones have a bonus for being in homeland, but they were not building in my original cities after I had 2-3 of them.
