The only time I attack land with bombers is when I prevent movement or kill resources. They would be made more usefull if craters took two or three movement.
I don't mind so much when the bombers kill population, as I usually starve down the captured city or turn their citizens into slaves so that I can fill the city with my own loyal citizens. If a bomber kills some of them, it means the city will be integrated with my empire sooner!
It does suck when they destroy improvements though. I generally use bombers to destroy roads linking the enemy's cities and then bomb his units that get stuck inbetween cities because it now takes more than one turn for them to get to the front. It's shocking how stupid the AI is on this front, they'll send huge stacks into open ground only to have them completely pulverized by my fleet of bombers.
So is your distrust of "flying stuff" real world? I always find it facinating when people project their likes and dislikes of realworld things into Civ, on the one hand it denies the easier path to winning and on the other it gives the game more substance and therefore makes it more enjoyable. Whatever floats your boat!

I like to have a bunch of colonies which are constantly being invaded by the locals, so I use my bombers as a mobile defence force. also, whenever I'm invading over sea, I like to divide out a beachhead and bomb all roads leading into it.
