Some Combat 101 help needed

Ok so here's the problem. I am playing as Washington, 8 AI players, huge continents on Noble. I have 9 cities so far and Alex is annoying the heck out of me with his demands, so its war time. Here are the stacks that I would like to use, need some advice on which one to use vs city and vs enemy stacks. If they need rearanging let me know. Thanks.

There's way too much information missing there for anyone to be able to give you good advice.

The promotions of your units, the defenders in his cities, the terrain of his cities, your tech advantage etc.

I can tell you this, though. That's not a sizeable enough force to take out an enemy Civ in its entirety. You can definitely take one or two cities and set him way back though. Start building more cannons; you're going to need to sacrifice them to take out any reasonably well defended Civ.
 
Use the cannons to reduce city defense bonuses.
Then use them to do collateral damage to enhance your
chances when attacking with other troops, if necessary.

Upgrade some troops to specialize on attacking cities (city raider).
Ideally have one or two with healing promotions.
Depending on the opponents force specialize to destroy his units.
(bonuses vs. gunpowder, archery,close combat or mounted units)
Check your units combat odds against a city, since the AI will pitch the
strongest defender against you depending on the type of unit you attack with.

And to answer the other questions I am only looking to grab the 3 near cities to my border because the are massive food producing cites with wheat/cows/crabs/fish resources. All 3 cities have 3 riflemen 2 cannon with one city also inculding 2 Greniaders

Stack 1: 3 rifle, 4 grenadiers, 6 cannon, 1 cav (for potential pilliaging/cannon defence).

Stack 2: The rest of the cavs.

Stack one moves towards the cities and Stack two, with it's two movement points, deals with wanderers out in the open.

If you want to do a two pronged attack, you want two more stacks. (given the units you listed)
 
yeah keep a stack of just cavalry to pillage his roads/improvements, it really helps since you can't use enemy roads.
Also, you could make more stacks, one or two big stacks isnt always good.

I learned that the hard way :p
