I could never list any movie as my sole top five, far too many I love.
 
OK this is in no particular order for me cause I have an immense issue with figuring out which I like more. And there will probably be lots of movies which I exclude that I might actually like more. But if I would think enough on this issue my head might explode so I will just take a shot at this without too much thinking.

Three Amigos (one of my childhood favs)
Star Wars (I think my favorite movie of the series is Empire Strikes Back, so put that in here if I need to be specific)
Fight Club
Pirates of the Caribbean (the trilogy of them really, if I need to be specific lets take At Worlds End)
Lord of the Rings (the trilogy here too, but to be specific again, Return of the King)
 
Fellowship of the Ring (the others were too effect-heavy)
Serenity (almost makes me want to buy Firefly)
Full Metal Jacket (fantastic use of... well, everything)
Der Untergang (the fall of the Reich in all its sordid desperation)
The Matrix (because you have to have a Descartesian/gnostic moment of self-doubt after watching this)

Serenity (almost makes me want to buy Firefly)
It's pretty much worth it, if you can get it discounted somewhere. Not nearly as polished as Serenity - just down to the even teenier budget - but very good. It's got a lot more character development and a great setting/feel. Funnier, too.

I could easily add 20 more movies to my list, many of which were on all of your lists too...But here is my list. And it's all subjective...

1. The Lord of the Rings I-III - I'm counting this as a single movie. A truly great series of books - and made even better in movie form. Out of the three, 'Fellowship' is the best one, and the 'Mines of Moria' sequence the best scene. Though there are a host of things that truly stand out in all three movies.
2. Raiders of the Lost Ark - My favoriteof the three. This movie has really grown on me over time. You should have figured that if the TV series was on my TV list, at least one of the movies would be too. ;)
3. The Neverending Story - As a kid who loved to read, I can relate to the themes in this movie.
4. The Empire Strikes Back - The emotional center of the whole saga.
5. Peter Pan (2003) - Probably the most visually magical movie I ever saw.
6. The Lion, the Witch, and the Wardrobe - Another great adaptation of a book that I really liked as a kid.
7. The Fifth Element - Lucky 7...I never would have figured that I would like this movie as much as I do.
8. Toy Story - All of the Pixar movies are good, but I like this one the best.
9. Braveheart - The last 20 minutes are the most powerful...
10. Pirates of the Caribbean - Dead Man's Chest - Who'd thunk a movie based on a Disney ride would be so much fun.
11. Gladiator - When I first saw this, I called it Braveheart Lite. Not anymore...
12. The Matrix - Many intriguing themes in the mix...
13. Kingdom of Heaven - A good reminder that in many cases, our historical viewpoint of who and what was good and who and what was evil is not who and what we think they were.
14. House of Flying Daggers - The best of the Far East quasi-historically set martial arts themed movies - a genre that I have started to embrace lately.
15. Star Wars, A New Hope - This was the first movie I saw at least 10 times at a theatre.
16. Harry Potter and the Prizoner of Azkaban - By far, the best adaptation of a phenomenal series of books.
17. Master and Commander - A stellar example of rich character development.
18. A Series of Unfortunate Events - A truly fun movie in a slightly skewed and twisted way.
19. The Sting - A movie that misdirects the viewer in a thoroughly satisfying way.
20. Last of the Mohicans - A tragic story with a haunting soundtrack.

Unusual fact about my choices. None of my choices are set in the 'real' present-day world. I tend to view movies as escapist fare, so the worlds tend to be either set in a historical, fantasy, or sci-fi setting. I'm especially a sucker for movies in a historical setting, be it real or quasi-real.

BtW, Hex if you haven't seen them you NEED to watch "Princess Mononoke" and "Spirited Away". Reading through your movie choices and knowing your love for beautiful art (and the fact that you are getting into asian movies) makes me think you will love them.

Amazingly awesome show. I rank it above, but similar to, Princess Mononoke
Laputa: Castle in the Sky (1986)

Grave of the Fireflies (1988)
Haven't watched it yet, but own it as well. It is a story following 2 children during WWII in Japan from what I understand. Slightly less mystical probably
My Neighbor Totoro (1988)
Amazing movie again. And very off-the-wall for anything American (somewhat normal for Japanese though)
Kiki's Delivery Service (1989)
One where the strong "Girl Power" theme of all Ghibli really stands out. Great story of a young lady coming to age.
Only Yesterday (1991)
Actually, I haven't seen this one yet, nor heard anything about it... According to Wiki, seems another less mystical one.
Porco Rosso (1992)
DO NOT WATCH THE AMERICAN DUB. Voices aren't so great for it, even if they are big name actors. Sweet story though.
I Can Hear the Sea (1993)
Yeah, again one I haven't heard of
Pom Poko (1994)
Super Awesome. If you have watched One Piece and want to understand what a Tanuki really is... This tells you EVERYTHING aboutt them :)
Whisper of the Heart (1995)
Really sweet story for anyone who has had trouble in love before :)

My Neighbors the Yamadas (1999)
Actually don't advise watching this one. Animation is really bizarre for a Ghibli. But I haven't watched more than a couple seconds of it at a time yet, so can't judge completely.
Spirited Away (2001)
Another you've seen, quite a good sample of Ghibli
The Cat Returns (2002)
Follow-up to Whisper of the Heart, but far more whimsical/mystical.
Howl's Moving Castle (2004)
If you liked Spirited away, you'll love this. And never look at a fireplace the same way again.
Tales from Earthsea (2006)
Didn't know they had done this one. I'll have to find it and see if it follows the book better than Sci-Fi did.
Ponyo on a Cliff (2008)
Well, it hasn't come out yet... but I bet it'll be good!
 
I own all of the ones you mentioned from Hayao Miyazaki except for My Neighbor Totoro (Im going to need to check that one out), but Princess Mononoke and Spirited Away are my favorites. And I tend to suggest that new viewers start with those because they have more of an American storyline.
