Warmonger Strategy Help

I'm not exactly new to this game, but of the many games that I start, I don't finish very many. This is mostly due to my motivation waning after I try to start killing off other civs, but fail due to taking too long.

I always play on a Pangea map, because I don't want to have to research Water techs (such as Sailing) in order to have meet other civs, and also don't want to have my troops sail across Water to conquer.

I mostly play as Germany (don't know why really, I just do) on a small map (the theory being that I can complete the game relatively quickly, then play a longer, harder game when I am better), but still struggle to finish most games.

I start the game and found Berlin. I first build a couple of workers (in order to chop down the trees and get things built faster, then build a barracks), and research Bronze Working (to activate Copper). I try and build a second city near a resource that is useful, and then start trying to build up my military.

This is wear the difficulties really start. By this time I will have Axemen available to build, so I build a few to defend my cities. Then, I try building a few to start my offensive, and I am researching the way to construction. The problem here is that I try to build a Super stack full of Axemen, Spearmen etc, but it takes far too long to build up. I always have the Slavery civic, but I don't normally try and hurry up the production, so I will try this. When I think my stack is ready, I launch the attack. I can't normally see all of my opposition's cities (this is my fault, as my Scout's aren't exploring opposition terrirory), so have to sort of guess my way to the opposition's capital. When I find it, I mostly succeed in taling it. At this point, my stack either needs more men (too many men lost taking the capital), or I need to plan where to attack next. If (when) I work out where to attack next, it seems to take too long to get there, and my army is a dis-organised wreck.

I can normally wipe out a civilization this way, but then I have to completely re-build my stack, which takes a long time. By repeating this, I can win a game, but it seems to take much longer than I would like it to (both building the stack, and the actual attack). I would really appreciate a few pointers on how to get my stack together, how to launch the attack, how to keep my army organised, and how to defeat the opposition civ in a timely manner. I really like the warmonger approach, but I can't seem to perform it properly. Thanks for any help in advance.
 
with axemen you need to attack early in the game or -

combine with catapults - to bombard the city - and suicide catapults deplete the enemy units through collateral damage. That should reduce your losses
