Be prepared to fight against stacks of 50 or more units.
Sometimes the stack is so big that it can not fit onto one screen when you click the stat to see what's in it.

I have used your strategy with lots of arty to destroy an attacking force, then counterattack and eliminate that civ.
I would try for at least 30 arty and 30 cav to handle that stack size (plus defensive inf or riflemen). Try building cav, inf, then arty in a sequence for several cycles to build up a good size force.
CIA is easy to remeber which is why I picked that sequence.

In my new carreer as a war tyrant I attacked the Amercians. I was prepared but only just, he sent a stack of cavalry into territory, where I couldn't even tell how many. I still don't know - should have counted them. It took quite a few turns to kill 'em all. But eventually they died. I stacked huge piles of defensive units the nearby cities and all but abandoned a few further away. Kept his cavalry moving, while I took advantage of my infrastructure, too knock them out. His stack never iniated an attack :lol:
 
another idea is to leave a city poorly defended then the computer always goes towards that city and you can just leave all your units near the city where they can just demolish the force
