What are unique unit for?

Read the Civilopedia! Yes they are different, and sometimes quite a lot better.

Example:
Swordsman, STR 6
Praetorian, STR 8 (Roman replacement for Swordsman)

Quite a difference! As the Romans you get a classical era unit which is equivalent to a maceman when attacking archers.

Are they different from other units?

Yes, quite. Just yesterday I realized the beauty that is the Redcoat.

This brings up another question: can you make too many UUs? My 80-Redcoat army got me to thinking that maybe I had gone overboard a bit... but is this a normal way to exploit UUs? I mean, it was an effective army to say the least, but all things in moderation, no?

By the way what's everyone's favorite UU. I'm obviously having a bit of a love affair right now with the Brits, but there's definitely some that are better than others.

I can think of Praets and Redcoats as best, maybe Keshiks as worst. I'm not a huge fan of the SEALS either.

Are you playing vanilla? In vanilla, I like the praetorians best, of course, but after that the cossacks. I'm not so hot about the redcoats, even in vanilla, because the tech path to them is so much longer and less otherwise-useful than the tech path to cannon.

The Quechua from the Inca is a powerful UU, if you know how to use it. It starts to shine from Monarch on. I'm still learning how to do a Quechua rush. On my last game, before 2000 BC I had conquered two AI capitals (Monarch level), I failed to take the third. Nevertheless I could build another two cities and beeline to Astronomy. I am playing a Terra map. The new world is mine. I'm the tech leader, I have a lot of production and all nice resources for the space race. Space race was my goal since the beginning.

no
just conquer 4 opponents at the same time, if you think you have too many

Well, there were only three opponents, and I was attacking them simultaneously. I suppose moderation isn't the name of this game...

Vanilla Cossaks were a glorious thing. They really nerfed Cathy in Warlords. Cossaks at 18 str, plus cre/fin made her one of my favorite leaders.

Warlords Redcoats are still a great unit, basically nothing pre-infantry can touch them. They spank other riflemen, stand up against Grens (especially if you give them pinch, which I usually do) and they are especially nasty if you upgrade some old CR3 maces to make super units!

Praets with their 8 str need no further explaination. I find that when using them against archers early on (before you have much in the way of defensive bonus to contend with) you often get better odds with combat promos than CR promos though. Given how outrageously high their str is, that makes sense though.

War Chariots are fun too, I like to cram a few extra civs on to the map when I play as Egypt, and rush some people, hopefully incoprporate one or two extra capitals into my growing empire.

Just try a nice pangeamap with the mongols, go for keshiks early and war until there's no-one but you left.
I'm playing my own ALC's and just finished up with the mongols, and had a great time (only a bit short, no more AI's at 1000 AC)

Egyptian War chariots are among the best IMO.
do not allow early conquest victory like with keshiks ( i am suprised you think they're the worst UU, I strongly disagree ), but allow early destruction of a neighbour at a pretty cheap price.
anyway comquest is not the type of victory I aim for when playing Ramses or Hatty.

Maybe I've under-appreciated the Keshiks then. Granted, I've never gone for such an early victory. I always thought the tech required was expensive and out of the way, and they didn't give very large bonuses to be worthwhile. Apparently I've missed something.

I must say I was a bit lucky, with the goody huts, popped fishing with the first hut (my capital was coastal) ans if I remember correctly I also popped mysticism and pottery.

Research horseback riding (indeed expensive) before archery if you can, this way you can start on the ger's and they will be finished (or ready for the whip) at the time you can pump out keshnik's.

My economy was in bad shape, but I kept going razing cities to keep the money comming in. I took one break to get to catapults (capitals get to hard to take with just keshnik's).
I had my workers built roads to the front, for my catapults to get there asap.

I think every unit can shine, but some just need a special map or circumstance, while others will shine always...

why arn't there any UU siege units? or UU bomber?

most UU are better then their replacement,
but what's the deal with jaguar? 5st +10% city attack, +25% jungle defence replaces swardmen.
i'd prefer the 6st swardmen. who cares about jungle defence for my swards?

Favorite UU is the indian Workman which can be used from the opening of the game through you spaceship launch. The German panzer is awesome if you can be patient to wait that long (coupled with assembly plants). My least favorite is the samuri, followed by the Celtic Gallic warriors.

best uu --> India

honourable mentions --> War chariot, praetorian, vanilla cossack

in warlords there is a uu siege

Jaguars do not require a metal, just the iron working tech. Montezuma can have stacks of jaguars before anyone else hooks up iron providing they discover them simulatneously.
