Since the wall changes I find the best timing pushes are swordsmen with rams, and muskets with bombards, but both require having easy access to iron/niter which is by no means guaranteed. The speed with which the Deity AI gets crossbows make the swordsmen rush extremely tight, you can extend it a bit by abusing the AIs elite decision making skills with builder and scout baits, but be prepared to feel diirrrty.
But by the time the medieval era rolls in there is usually an AI open to the idea of selling you iron, for the low cost of half of your empire, so I have been playing around with starting the Domination off with either knights and crossbows (some of you seem well practised at this) or a midgame start with cuirassier and field cannon. Killing units is generally a breeze, but my success at taking cities is almost entirely dependent on the level of their walls. If they have current level walls then I'm SOL, an era behind is a slog but doable, anything less and its a clean sweep.
I like light cav a lot, but I don't think that it's terribly important for them to be as cutting edge, due to their main role being to run in, pillage and run out. Pillaging districts has a noticeable effect on city CS, so that's a bonus.
Lastly GGs are incredibly important, the +5 CS is obviously good, but having the movement to cycle out battered troops and move in fresh ones is probably more important. But.. If you start off peacefully it's such a pain in the arse to get a renaissance/Industrial one. The AI spams a ton of encampments, while I have 2. As I just have my feeble human brain and no yield bonuses I actually have to build other districts to research and outfit a relevant army. So I have one city whose job is simply spamming encampment projects.
