Because the Versailles Palace, the Summer Palace in Saint Petersburg, the Sublime Port, the Apostolic Palace, the Official Residence of the Emir of Dubai, the Forbidden City, the Chrysanthenum Palace, and the Old Imperial Palace in Rio de Janeiro are definitely bigger, but maybe a "castle" and a "palace" are distinct by definition for records here.

A castle would surely imply that at least in some point in its history it was a military fortification, hence Windsor qualifying but not Versailles.
edit: even though both are currently used as and would be defined as palaces.
edit: although come to think of it none of the places you mention were fortifications in the least sense, they are all palaces and not castles.

I currently live in Westminster which is a suburb of Denver, so I'll look at the city of Denver.
I'd go with the Denver Art Museum. It's a good art museum to visit, but just looking at it is pretty impressive.
It would likely give some sort of cultural reward and maybe would require being adjacent to mountains.

That sounds spot on. I would definitely give it something like +100% production on the projects, or make each completed project be twice as effective, as in 2 lightyears extra speed per turn instead of 1
I don't know if gardens qualify as wonders but this is the closet one to me called "Keukenhof Gardens".

the Petrifying caves of Savonnières
In Savonnières, underground seepage waters are extremely loaded with calcium carbonate. It is from the middle of the nineteenth century that man has managed to tame these active and abundant waters to develop an unusual craft which only nature is the instigator: Petrification. By an extraordinary alchemy the water, laden with limestone, slowly trickles over the objects deposited under the natural cascades and covers them with a calcite enriched with silica crystals which gives them a sparkling aspect. It takes about 1 year of patience to get a sufficient layer of calcite. Otherwise it is a banal cave with stalagmites, stalagtites and an underground lake.
