City flips are a bit of a black art to me as well, but only because I haven't managed to find time to really understand the subject. There's a good thread on this subject in the Strategy Articles forum, defining the mathematics of flip probability, and explaining the different factors that affect it.

Same game, second question, in an attempt to thwart persian influence I went to war with them but within 10 turns my civilization went into anarchy! And the strangest thing was that while I was in anarchy I was getting more "we love the king" notices than I had previously seen in the game. When I finally got out of anarchy (by suing fo rpeace with persia), I chose Communism for my government. Did my zulus have the wrong government, or what?
I would guess you were in democracy. War weariness will get you if you stay at war for any length of time in democracy, unless you take special action to reduce it. War weariness is increased by such things as losing cities or troops, having your troops in enemy enemy territory at the end of a turn, or letting the enemy occupy tiles in your territory. Again, there are articles in the Strategy Articles forum explaining the mechanics of this.

If you plan to expand by military means then you are better to do so in Republic or even Monarchy. A Republic can cope with war for longer than a Democracy, and in Monarchy you can wage war indefinitely and not experience any war weariness.
