Why do I keep getting attacked?

That's just wrong. There are plenty of things you can do to avoid being attacked, however you need to know the attack thresholds of the specific leaders that you're trying to avoid being attacked by.

You can use diplomacy to boost relations to a threshold high enough to not get attacked by one specific leader, but you can't rely on not getting attacked at all during every game. IE, you can choose to adopt Isabella's religion, but you can't stop Isabella and Boudicca from creating rival religious blocks and having to choose to ally with one or the other.
 
Yes , you can. There is a thing called no state religion ;) If you don't adopt one in the scenario you devised above, boudi and Izzy will hate eachother more than you, so it is highly likely that they decide to throw to eachother throats than molesting you.

But then you aren't going to get the bonus either, leaving you vulnerable to other penalties. Including the obvious penalty for refusing to adopt another civs' state religion. It's the old Machiavellian "better to be a sure ally to some and a sure enemy to others than a possible enemy for everyone" issue.

I'm certain other players can manage diplomacy better than me, but I'm also fairly certain it's impossible to be best friends with everyone in every single game with no chance of ever falling below a threshold where Catherine might backstab you.
