I built the first GOTM in the map editor to do some testing. So I played Romans (fishing/mining) on Noble. I tried two scenarios:
1. Build warriors until you hit 3, then worker and settler.
2. Build worker first, then warriors and a settler at 3.

Scenario 1 - Grow to size three first
I built 2 warriors before switching to worker/settler production. I used my worker to chop two forests and had the settler by 2600 BC. I could focus on an early religion and founded Hinduism.

Scenario 2 - Worker first
Built worker first and researched bronze working (chops). Then I used the worker to do two chops. This quickly finished my first warrior (19 turns instead of 15) and helped settler production when I hit size three. The worker also built several improvements.

Results at 2480BC

Science:
Both scenario's had Fishing, Mining (traits) and researched agriculture, mysticysm, Polytheism, Bronzeworking. Scenario 2 also had Masonry.

Sceanario 1 had completed Hinduism early and followed by bronzeworking and farms.

Scenario 2 needed Bronze working for chops asap, and didnt get Hinduism till 2600 BC, but it did have masonry, so was in good shape to get judaism in case hinduism was missed.

Production:
Scenario 1 had produced 3 warriors, 1 worker and 1 settler. The settler was produced in 2600BC.

Scenario 2 had produced 4 warriors, 1 worker and 1 settler. The settler produced in 2480BC.

Improvements:
Both Scenario's had chopped two forests, but Scenario 2 had a gems mine, corn farm and grass farm, so in much better shape.

Conclusion:
Scenario 1 had early religion, but was trailing one warrior, one tech and three improvements.

Scenario 2 seems better. You need bronzeworking for chopping forests and agriculture. Then you can focus on religion. But you got improved city tiles very early which helps science (masonry), producion(warrior), and growth.

*goes off to try early settler strat*

I never recorded exactly which was better turn for turn, but your analysis mirrors my gut feeling. I always felt like I was able to get more done sooner using the worker chop strat. The only thing I'm still having difficulty with, is which techs I should research right after getting Brone Working. It always seems like I end up having my worker just stand around for a few turns as I wait to finish up a tech, since I don't have enough worker abilities researched to keep him busy - a terrible waste.

I play as Bismark alot now. So I start with Hunting and Mining.

So my classic research list goes like this.

Do classic worker first

Bronze Working > Agriculture > Fishing > Pottery > Writing.

Settler Rush up to 3 cities focusing on building workers in every city.

Pop Rush/Chop Rush Libraries in every city.

Archery > Mysticism > Meditation > Priesthood

Chop Rush the Oracle using 2-3 workers. Use the free tech on Metal Casting.

Pop Rush/Chop Rush Forges in every city.

From there it's usually candy. I usually go for Confucianism and Taoism for my religions. Unless I'm playing an aggressive MP, or on a high difficulty. In which case I'm forced to adapt to the situation; as things become sticky very early on.

Especially since I usually only have 1 warrior and 1 archer per city... Which may be enough to keep most AI's quiet in Monarch. It usually invites problems in Emperor or higher.
