My local grocer just started supplying my FAVOURITE kind of cheese: Gjetost (caramelized goat whey cheese).

According to most people I feed it to here in Canada, it tastes like sweetened diarrhea (thier words, not mine...) but I really can't get enough of it!

As a quasi-microbiologist, I find cheese-making even more fascinating than beer/wine making. There is just such a diversity of cheese products out there, all with such unique tastes!! A few other of my favourites include

Tell me about your favourite cheese and the ones you can't stand.....
 
I buy 2 lbs of white american (for sandwiches) for my roomate and myself every week. Pluus a big hunk of sharp chedder.

I eat my cheese on sandwiches and with crakers, but my roomate claims that the cheese stands alone, and eats it by itself.

As you can see, I am a cheese n00b. My roomate is a much bigger cheese fan.

I don't like cheese with mould in it, I am a bit of a cheese Philistine, I like cheddar and some mild cheeses and cheese spread, that I love too much. Or so my belt is straining to tell me. :) Parmizan is heaven on good spaghetti bolagnaise.
 
Good ole American cheese. And cheddar, parmesan, italian, mozzarella, swiss, etc. I work in a dairy department, I know lots of them and love them all. Hell if I could I would rub my face into them while I stock them on the shelf.
 
I recently got addicted to Dubliner Irish cheddar. Other than that, I'm a meat-and-potatoes man.

Errrr....I mean a cheese man. I mean, like cheddar and Swiss and the other basics are like the meat and potatoes of cheese.....

Bleh. You know what I mean. :)
 
Ridiculously sharp American Cheddar.

That's about all I eat outside of pizza and awful processed junk.
 
I have always been a fan of brie and camembert (sp).

I also LOVE mozzarella, but the stuff they sell in Canada is really just rubber dyed white. The mozz I am able to buy here in the US is much much much better.

I also enjoy cheddar.
 
CHEEEEEESE ! Oh yeah. I'm doing a trip back to France and the only thing I have asked to people that will feed me is bread and cheese.

My favorite is roquefort. Ripe, to the point of being spreadable... Larzac is good to (it's roquefort creme).

I also love comte, a kind of Swiss cheese without the holes. It's hard to find good comte (you will not find it in supermarkets) but boy is it good.

I am partial to stinky, pungent, strong cheeses. Bland stuff is barely good enough to be grated over my pasta.
 
I've never met a cheese I didn't like!
 
The Old Spaghetti Factory restaurant chain makes a pasta with mizithra cheese (spelled some places as "mizythra"). It is a little hard to find, but well worth it, very aromatic. We have duplicated this at home as an OK main course or an excellent side dish. Just cook the pasta and sprinkle finely-ground mizithra over it. You can toss it while the pasta is hot to melt it together, or pour a little browned butter over the top to sizzle-melt the cheese.

We just had some friends over and had salmon on the grill, with this on the side, a very nice combination.
 
I hate all kinds of cheese. Of course i havent tried them all but i hate the general flavor of cheese in particular. I dont like anything dairy really except ice cream.

I must be the only one... :sad:

IIRC Asians are not particularly fond of diary products either, so I'll say you're not exactly alone :)
