Blue danish sp? I love the ones with weird molds in them. :lol: It is mold what they have, isn't it?

In general I prefer sheep cheese over goat cheese, although I like feta (i think it is goat cheese, but I'm not sure) and goat cheese over cow cheese, which is pretty tasteless, compared to the others.

Parmesan, manchego, Swiss, and the one on the pic, which is made in a very little village where my parents were born.

@Che Guava. I have never tried that kind of cheese, but the mixture looks nice. If you like that combination, you should try to find quince paste, I love the combination of sheep cheese and quince paste, one slice of each, high flavour cheese and sweet paste.

This is quince paste, since I guess you don't know about it.

mhhh, cheese, I love it, can't get enough of it :)

Personal favorites are Gruyère, Appenzeller, followed by various alp cheeses and Tilsiter, sometimes Emmenthaler too. Plus, of course, Raclette :yummy:

I'm not much into soft cheeses (camembert and the likes), though.

Btw, when you talk about swiss cheese, what kind do you mean? I'm guessing Emmenthaler, but I'm not so sure....

I enjoy lots of cheeses. Mainly the blue vein, goats cheese and creamy varieties. Too many to start going into it all now. Oh, except for the fact you guys have failed to mention Halloumi so far.
 
I like red leichster, or Mhongany

Thanks Urederra. I've never tried sheep cheese or quince paste, but my gf has told me that both are quite good (and probably better in concert), so I'll see if my cheese-supplier has any....

You forget that us north americans know diddly-curd about cheese! ;) WHat is halloumi like anyhow?

In fact folksif you're putting down anything more unique than cheddar, make sure to say something about what kind of cheese it is, and what it tastes like!

I find cheap goat or sheep cheese to have more distinct flavour than cheap cow cheese. So i will prefer either over cow cheese until i can affort higher quality. :D

While great cow cheeses are truly awesome, far too often cow cheese are just bland (don't get me started on Cheddar).
Goat cheese, on the other hand, has a built-in flavor so that even the crappy goat cheeses at least have some taste.
 
ok, you got a point there, but then I rather eat a bit less cheese but only buy the higher quality stuff.

and of course, cheddar has nothing to do with cheese :p

agreed 100 %.

I think is due to the protein content, the fermentation by-products of proteins gives most of the flavour of the cheese. Goat and sheep milk have more protein % than cow milk, that is why usually sheep and goat cheeses have a strong flavor, regardless of how are they made.
 
Provolone, with mozzarella and swiss up there as well.
