Well, these spring blizzards can crop up rather suddenly, with icy roads and zero-visibility. The highway between Calgary and Red Deer is extremely dangerous at these times, and driving is treacherous all over the southern part of the province. Instant yeast doesn't won't make a good dough. In fact, judging from the video, that one doesn't look good.
Do you use extra suger when you make the mother dough ? Do you let the dough sit out for four hours before putting it in the fridge for two days ?
My pizzas tend not to rise in the middle but the crust rises up quite nicely.
Unless it makes the dough fresh, by hand, it's likely full of preservatives, and therefore nasty.
Those of you who think making pizza is "a simple assembly job. Take dough. add sauce, cheese, meat" (meat??) just don't know pizza very well and never tried to cook one.
