LouLong, is there is barrack building? My crusaders, being conscripts, were generally slaughtered trying to attack 4/4 Arab spearmen defending towns.

yep but they come later, second "age", with pikemen.
Crusaders are indeed weak to show their lack of experience but if they survive they can become experienced and good ! And they are cheap. But I would nt rely on them only.
