Can't see the point of workshops and watermills

Warlords 2.13, c. 6 games on Prince and Monarch.

Have yet to build even one workshop or watermill. It seems that I am always better off with some combination of cottages, lumbermills, mines, and windmills. And then there is having to commit to a particular civic to get full benefit ....

I notice that I seem to do less chopping (at least inside the cross) than most posters in these discussions. 20-30 hammers now but lose 1 forever - 3 if I can get the lumbermill built. +0.5 health.

stateproperty+biology and a lot of grassland and you have a very imba production city with workshop and somefarm . 200-300 hammer is easy :D
 
I do love watermills, though I admit I am not a huge fan of windmills.
 
Your cities are often not fully forested, so workshops/watermills will take those grassland cities to the next level.
 
Yet another great thing about the Byzantine unique building:

Run Representation, caste system and state property right to the end of the game. Forget emancipation unhapiness, forget (mass) cottages and focus on hammers and specialists. Feel the power of workshops and watermills.
