In addition to the excellent post by @ArchGhost, another tactic you can use with Cuirs is forking cities. With two-movers you can place your stack so that it can hit two cities. This will usually confuse the AI and it's not quite sure how to defend. If you are lucky, units will even move out of a city and you can farm them. But just moving to a different city they will lose the fortification bonus.
Once you have basically beat the AI, you can split up the stack and take more cities faster as well. Cuirs are simply really fun to play with, because warfare is so much quicker. Since they ignore walls, the cultural defence isn't quite as horrible either.
You will lose quite a few, especially if the AI has stocked up on Pikes (or well-promoted hill-longbows), so it may take a little while to cap them (compared with cannons, where you may not lose a single unit). Just keep whipping more and you will break the AI's back sooner or later.
