"I'm going to burn this thing down" would be something I'd say if I wanted to burn something big, like a house.

"fat chance" is sarcastic. "There's a slim chance of that happening." means there is a small chance. "FAT CHANCE!!" is sarcastic. If someone wasn't being sarcastic and said "fat chance" they would mean it's likely. But nobody does.
