I found a way to view the production screen when using a spy to 'view' in the espionage. Typically it is not possible to view the production screen. In my game I found a use case where this was useful information.
I was the leader in tech and already started on Modern era techs. Shortly after America reached the Modern era. I was interested in which tech America did first to reach modern era.
It is not possible to view production when in espionage view
Here are four images that shows how I was able to see his production view in his capital from the espionage screen.
1) Click on Economic Overview screen
2) Click on any of the icons for the building/units you are building in any of your cities. Then click "close" button at bottom left corner. You should now be viewing the city view.
3) Next, click the SPY icon. Then click view for the city you want to view. Lastly, click the close button
4) you should be seeing what is available to build for that Civ. For my use case, I was able to see America tech into Radio because I see Broadcast Tower available to build
