Peaches Lamb has uploaded all the Gathering Storm tracks on their YouTube account and you can listen to them on there including all the Ambient tracks, same as with all the previous expansions.

My question is, where are these tracks stored in the steam installation folder? I would like to listen to them including the ambient tracks without having to have to do it via YT.

I think they are compressed with a unique extension, which you'll need to find a way to convert to a different format afaik.

Yeah, but oddly there's no official YouTube video with all the music as there was with Rise and Fall.

They were very late with the drop yesterday (early evening US East Coast), so part of me thinks the music launch was an afterthought for the powers that be. iTunes generally drops new music midnight Eastern time on Fridays, unless a publisher posts it later (which was what happened yesterday). If they do post a YT video, I’d imagine it would be out next week.

However, Peaches Lamb does an excellent job posting Civ themes on YouTube, if you can’t wait. The quality is consistently great, and I enjoy the ambient tracks that somehow never make it onto the OST. Peaches has the entire catalog of music for both Civ5 and Civ6, which I am entirely grateful for.
