How can I make civs not advace to next age?

I think you pretty much got it. The units and improvements are simple, just adjust the PediaIcons.txt.

Everything else would be a graphix job. Either through cut-n-paste or repeating some in the editor (like flics). If you only have an ancient era then you would only have to adjust the modern era to match as the 2 middles eras would get skipped.

I'm not so sure about this. I checked the editor in the C3C Age of Discovery scenario (I assume this is what GRM7584 is referring to as Colonize). All the natives' special techs, such as Ball Games and Blood Cult are flagged as "Not Required for Era Advancement." So go ahead and check the simple solution, and see if it works.
 
You might also play around with the flavor features of the C3C editor. Techs marked with a flavor seem to cost a different research price for civs that share that flavor, vs. civs that don't have the same flavor. Check out the Fall of Rome or Age of Discovery conquests for some ideas on how to do this.
