When playing the Illians and having completed Ascension, does some of the accumulated War Weariness go away when you defeat a civ you've been fighting for a long time? If it doesn't, I probably won't be able to finish the game as my most powerful city already has 5 more unhappy faces than happy faces, mostly due to War Weariness. Is the gist of it that you have to win quickly after completing Ascension?

If you kill a civ ALL war weariness you've built up against it disappears. Ascension doesn't matter for this.
 
Is there a way to find out how much War Weariness you are suffering for each opponent?

Mouse over the opponent's name on the scoreboard. You'll see something that says War Weariness: number. How much unhappiness that number translates into depends on a lot of things:

Difficulty level (very small increases as you go up)
How far into the game you are (ramps up very slowly)
Map size (unhappiness gets a LOT worse as maps get smaller. You suffer THREE TIMES as much on a duel map than you do on a huge one, all other things equal)
Population in the individual city (it multiplies, so a 16 pop city gets twice as much unhappiness as a size 8 one)
Civics, buildings, etc that directly modify WW
Half unhappiness if it's a multiplayer game
