I've noticed that when I have explored to the other side of an ocean, but I haven't revealed the middle of the ocean, then pathfinding for my ships will still choose a path directly through the unexplored ocean. This shouldn't happen because it reveals to me whether there's a landmass there.

Actually I don't think that means there is a landmass.
I know it has tried to go through unexplored area which I knew was undoable.
It might take me through the south pole.
I know it is ice because I am at the bottom but it only sees black.
That means it doesn't even know it can't go through.

David is right. I don't know if this is a bug so much as a quirk. I always like using my galley hitting "Go to" then dragging the mouse all over creation to see if there is any random path that can take me into the fog of war and possible another continent.

A fix where you can not "go to" any area of land that is under the fog of war should take care of this.

That would be better but not as fun.
I like seeing a 30 turn movement required to more 2 spaces since it has to go off the screen through the blackness.

This doesn't give you any information about what is in the unexplored area. Your ship will attempt to sail along the line indicated regardless of any landmasses. If it reaches a square it can't travel through it's move order will be cancelled and the unit will become available to move again. There is no way to use goto to get any information on unexplored regions.
