Pierogi stuffing

so after having moved into a new flat with two friends, and with a working kitchen:woohoo:.
I have started to make huge portions of pasta bolognese to be put in the freezer for later use(its much cheaper than buying and making little portions)

In line with this, im beginning to make lots of pizza and other foodstuffs for use the rest of the week. So I wanted to hear all you eastern bloc guys;) here on the board what you would recommend for stuffing in pierogi.

its got to be somewhat cheap, be able to be put in the fridge for 3-4 days, and be tasty when eaten cold.

Im thinking of something with spinach, feta and perhaps ham, but i would like some suggestions for other kinds of stuffing.

Im from western PA which is like Eastern Europe mixed with Ireland.

I suggest chedder and mashed potatos. Bag of potatos $2.50 bag of chedder $2. Add a little milk, butter and salt and you're set.

Alternatively, kraut and minced kielbassa. Can of kraut $1, pound of kielbassa $2.50.
 
I love "farmer's cheese" in mine.
 
The best filling is minced pork (with spices, maybe some bacon, etc.), but that wouldn't be too cheap.

Sauerkraut w/ mushrooms works great too, my 2nd favourite flavour.

The Russian potato/cheddar cheese thing is good too.

It's also quite popular to put fruit inside, but I personally hate it.

Also Sauerkraut with mushrooms, or just more potato in the inside.

Or tiny sausages if you don't want minced meat,

Fruit? Nasty. How do you prepare them? Do they fry pierogies with fruit filling?
 
I don't know how to make them.

It's not nasty, it tastes very sweet though. I am sure alot of people would like it, but it is not my taste. (I am known to be a crybaby and force groups to change restaurants if I am served fruit Pierogies :lol: )
 
I'm very fond of potatoes cheddar and jalapeño. If I'm making my own pierogis, that's the stuffing I'll use though I go pretty light on the jalapeños.
 
Minced meat is the best, but ordinary potato and cheese is good and probably cheaper. (I'm not from the Eastern bloc though)
 
thx all, I think im gonna go with the mashed potatoes and cheddar cheese suggestion in my first try. Maybe half a batch with TLO's suggestion with minced meat.

Btw this deserved a poll(a meaningfull poll in off-topic for a change:D)
