I'm actually switching my vote to Byzantium, at least for now. It has a lot of cool things I personally like that I would want in a civ. They ended up surprising me and I don't know if Gaul can top them.
That's not everyone's cup of tea, but I can see myself playing this civ often. It checks a lot of boxes for me.
- Kill enemy units to spread religion. A violent alternative to using apostle spam. I've been pining for a civ that has this mechanic since R+F, so I'm delighted to see it.
- Cavalry that can ignore walls!
- A bonus to helping found a religion.
- A knight replacement that can buff nearby religious units.
- Snowballing from converting Holy Cities.
- A unique district that gives amenities (especially after the recent change) and Free Units!
- Not pigeonholed into one Victory type.
Personally, I'm most excited about Gaul, at least from a gameplay perspective. Culture + Production seems like a powerful mix, as both of those are just so hard to come by in the early game. Also my biggest blind spot in Civ 6 is neglecting my defense and getting rushed in the classical, but I think having a warrior/spearman replacement along with an IZ that provides defense, will definitely be welcomed by players like me.

Looks like it's Gaul first for me, since Ambiorix comes before Basil.As a knee-jerk reaction (since I have very little information to go on), I'd say Gaul. But I'll need to see who the leaders of each civ will be and then play whichever one comes first alphabetically. Because that's how I roll.
