What I mean is, that if you have (Doing a civ3 example) the ability to build pikeman, have iron in the city box, but want to build the early spearman instead.. Is this possible?

Nyet. Even if they would still be useful (e.g. building pikemen after musketmen are available), they are gone. I normally hang on to two generations of units.

yes u can build soem units as long as they arent absolete I believe. For example I can build Axemen but I want to build jus tpolicing units. I take my copper and trade it or I disconnect the trade network to my city by pilaging the road or I pilage the mine ontop of the copper or road leading to it, and I can now build warriors instead of axemen. Im not sure if pikemen require Iron, if they do you can disconnect iron whiel you still ahve copper and you should be able to build them.
