There
are actually some shots of Dominion ships in the BOTF2 site.
The main one is the Jem'Hadar "Bug". This particular model is being made by a guy called Zahadoom.
He posted several shots of it all the way through the design process, but this is the link to the final:

There are some other Domion ships posted on the site, but these particular ones are nameless/have no purpose <yet> as far as I know. Not that that matters - you guys can use any of the ships any which way you choose.
3 Un-named Dominion Ships
As a guide though, I imagine that you could use the top one as a Transport/Scout, the middle one as a Battleship/Seige Unit, and the third one as a Transport/Settler unit.

If you need more Ferengi models, the Ferengi were a playable race in BOTF1, so there are plenty of models that you could use there. Again, if you need info on the ship classes, I can help you.

On the subject of the Gorn, perhaps the fact that they are Reptiles could be used as the reason why their ships aren't sleek - they are completely different in terms of a race, (Ie. not human with facial bumps

) so they would have completely different design ideas and philosophies - although that could be said for every alien race FULL STOP.
I think having a ship that was completely different from the norm would spice things up though. In BOTF1, ships had hull armour, and shields for defense. Once all shield points are depleted and the hull armour is gone, your ship goes boom.
Its has been suggested that in BOTF2 there could be ships that have no shields, but massively strong hull armour, or strong shields and virtually no armour.
There could even be ships that have no beam weapons, but have hundreds of Torpedoes that do minimal damage. (The combined effect of all those Torpedoes would obviously be devastating though)
Unusual ships like these would spice the game up, especially in battles. I think this may even be useful for your mod, although I imagine implementation would more difficult.
