The point of astrobiology is being ready for the unexpected. The idea is that when we find life on other planets, we might not recognize it as life at first (!) just like Colombus didn't initially recognize America as a "new" continent.
They're speculating because playing games like "What color would plants be if the Sun had a different spectrum" or "how would a palm tree grow on a planet with less gravity" gets our minds stretching and ready to see other explanations than the old Earth ones
I think astrobio's pretty cool. "What-if" science always is.
