What era do you declare war in?

I've always been a Knight man... always have, always will :D the middle ages are the way to go.
 
I suspect that a very early war with chariot or horse archer is viable.

I'm not a good Civ player, but I tried the game out of the box as the Mongols on Prince and I found it a bit easy. I made straight for Horse Riding, built 3 Mongol UU's and destroyed the Japanese. If you can get them out quick enough they didn't have time to build city walls of anything greater than archers. The stats were 6.6 (one free combat I upgrade) vs a typical 6, plus my UU has 1 first strike. 3 units were enough, just in case 1 of his 2 archers beat me. I won about 6 battles and lost 1 unit.

The other great thing is they ignore terrain movement costs. So they can maximise the time before people upgrade their defences and research city walls.
 
I'm a builder. My goal is to out-expand and out-build the neighbors, until it comes time to expand into their territory. So often, the only wars that I wage prior to the modern era are against barbarians. That's not to say that I'm not fully prepared for war at the drop of a hat, but I prefer to expand peacefully first.

Current game, I'm in the 1700AD era, chieftan on large/continents against 8 other AI civs. I have yet to go to war with any of them but I have roughly 20% of the world's population and I control 20% of the globe's land area. Since my winning conditions are only conquest/domination... there will be a war down the road. Probably as soon as I get a few modern era units.
