I have an Xbox 360 with HDMI output. How high of a resolution can it support without lag and while maintaining playability?

1080p, which is 1920x1080. IIRC all games are required* to run acceptably at max resolution or MS won't accept them.

*At least in theory.

Any modern video card can run at outrageous resolutions - 2560x1600 for GF8 series cards. The monitor drivers have to inform the OS what resolutions the monitor supports, though most graphics card drivers will let you force custom resolutions. The vast majority of monitors will be picked up automagically, but all of the decent ones will include a disk anyway.
 
I think if your console has an HDMI out you can buy an HDMi to DVI cable.

Quite a few new monitors also have HDMI connector so there's not necessarily a need for converter.
 
BTW I'm just wondering: How do you hook up a computer monitor to a game console, and how do you hook up a TV to a computer? Is there any way I can get my Xbox 360 to display on a computer monitor?

It just depends on your connectors and if they match up, and if your TV supports high enough resolutions. My TV has a VGA input like a computer monitor, so I use that. I tried running a DVI to HDMI cable to it but it looked awful. I looked into why but I forget why that was. I thought it would be better but guess not.

Your TV also needs to be capable of supporting PC resolutions; old tube TVs run at 640x480 and look terrible when hooked up to a PC. Most modern flat screen TVs can be hooked up to PCs nowadays though. I think all LCDs can function as PC monitors.
