I prefer to peacefully muddle along building way more buildings and wonders than I should and building up my economy to high levels and trying to get a solid tech lead, mostly forgoing short term advantages for long term advantages. When someone declares war on me, which is pretty much inevitable, I usually then either wipe them out as an example to the other AIs (who are, sadly, much too stupid to notice the example - it ought to store some information about how that last attempt by someone to attack a civ did) or stop when I'm tired of pounding on them and they are willing to offer me something that is not pitifully useless, or when their last cities are of on some island I don't want to bother tracking down. Then it's back to overbuilding and economic development until the next "incident".
