Which settings do you turn on or off? Turning off certain settings may result in the game being played quite differently.
 
I always have them all on, but which one I go for is a different matter. Some games I up for any victory; some I like to focus in on a peaceful spaceship; others I try to beat up my opponents as much as possible.
 
All on except Victory Point.

Wonder and Elimination are not victory conditions, by the way. ;)
 
It depends. I used to leave SpaceShip on as a cop-out for when I got tired of the game. Last time I did this, I forgot I had it turned on and almost lost when I saw that the AI had 3/10 parts needed. I had to work to get mine done, but they only had 8/10 by the time I launched.....

I haven't had a domination in a long time, or a conquest. Usually it's diplo of Cultural.

Please allow me to point out for those that don't know - it's true that these are not technically victory conditions but they significantly contribute to a victory by the more formal 'conditions'. This often leads to them being confused as victory conditions.

Wonder - when you build the last wonder, the top player on the histograph wins. So it's essentially a histograph win.

Elimination - if a player loses the amount of cities set (its 8 in Fall of Rome for eg) then they are eliminated, their civ and all cities crumbles to dust. You can win in a conquest or domination fashion this way and Elimination merely speeds up this victory condition as you don't have to go and wipe out ALL their cities.

For what it's worth, I always turn the wonder victory off but that's cos I rarely build wonders myself.
 
I keep them all on even if I have a specific victory condition in mind (usually cultural 20k or 100k but often enough get into a tense space-race [which I usually lose]) or have to settle for (*sigh*) histographic win.
 
I keep them all on. If you turn too many off then it becomes incredibly unlikely that the AI will defeat you, regardless of the difficulty level--the human player is too good at aiming their entire game at one goal.

Unfortunately this leads me to often win accidental domination victories (I play vanilla so I don't know where exactly 67% happens).
 
With Victory Points, you can win before getting the full Conquest or Domination victory, and that's not as fun. Either that, or you can do a Immortal, Chasqui Scout, or Jaguar Warrior rush, which is enjoyable the first two or three times, but quickly gets boring later.
 
I personally don't like cultural victory, so I usually turn it off. However, when I'm playing Diety or Sid level, I keep cultural on, because sometimes that's the only way to win.

I play with spaceship, domination, and conquest on.
