Why can't I get ships when I captured a city?

Why? You don't capture ground units.
Historically, armies didn't always capture naval units when they captured a port. Sometimes the ships fled, sometimes they were scuttled. Maybe it should be something that happens occasionally. I don't believe it can be modded into the game, though.

If I were commanding a cities defense, and I thought that the city was going to fall, i'd attach explosives to anything the enemy could put to use and blow it all up when my defenses were breached (presuming the ships/planes couldn't escape).

But you can capture Catapults, Trebs, Artillery, Radar Artillery etc.

My view is that there should be a small chance of capturing
ships, which would be variously damaged?

If you assume there are troops manning the ships that fought to the death, then the ships would likely be destroyed.

For a good example of this, read what the Germans did to the port city of Brest before the Allies managed to capture it.

Nope you cannot capture air units either.

Acutally, you can capture any unit with no defense that you have the technology to build, so if an air/naval unit has 0 defense, you can capture it.

Name one. No fighters, no jets, no stealth, no bombers can be captured, whats left?

The capture or not is a play balance choice, not a realism one. I think they made a mistake in allowing capture of bombardment units.

Does the AI capture many human units or is it the humans that fill out their ranks with free cat/trebs/cannon/arty?

1. Before Conquests, Stealth Bombers and fighters had 0 defense. In the WH Fantasy mod for Conquests there is a coracle ship that has 0 defense and I captured it.

2. The AI dosen't seem to actibly go and capture stuff, but they capture if it's nearby.
