How do I configure windows 7 to show file extensions (i.e. .doc, .docx, .zip, etc)?

Easy way: just type folder into the search box on the start menu; Folder Options is what you want and it should be at the top of the list so you can probably just hit enter. Then go to the View tab and uncheck hide extensions.

Slightly longer way: open an explorer window, Organize > Folder and search options > View tab and uncheck hide extensions.
 
I will one day kick the person who first came up with the idea to 'hide extensions' as a default in the face, if i can distinguish it from his butt
I agree. I hate having the extensions hidden, unhiding them is one of the first things I do on a new computer.
 
Win7 is an improvement over Vista, yet at the same time they dumb everything down so an 8 year old could use the computer. Sigh, it won't even tell you anything these days. UAC says oftentimes:

origin: downloaded from the internet
or
origin: a hard drive on this computer
WOW THAT'S SO DESCRIPTIVE! It doesn't even tell me what hard drive it is! THANK YOU WINDOWS YOU'RE SO HELPFUL

another way to do this is to right click --> properties, it should tell you what kind of file it is.

oh, also, a single left click SHOULD tell you what it is in the bottom left of windows explorer. It probably won't though for anything outside basic stuff like "text document"
