Do siege towers work with cavalry? A friend of mine claims that she tried it in a game we were in and it didn't.

I think they work with melee units so it depends if cavalry are counted as melee
 
Battering Rams and Siege Towers do work with mounted units. My units deal much more damage when with them.

Well that has been my experience with horsemen and battering rams but nice to have it confirmed
 
Also, I'm considering creating a full strategy section for CIV 6 in my channel, and I was wondering, which type of strategy would people want to see on video rather than just written down? If you are struggling with any particular aspect of the game, would you mind mentioning it here? It would help a lot to know which aspects of the game's strategy people want to know more about.

1) Written down is searchable. Video isn't. But video is cooler. However, video is harder to go back and reference, because you have to play to the part you want instead of just scanning through a list of instructions. So if you have time to do video with a transcript in text, please do that. That should also be better for CivFanatics SEO, so they may thank you if your post is a hit.
2) Aspects of the game:
  • Very early barb horse attacks force me to make extreme changes to early gameplay to survive. Any recommendations for the best way to adapt in this situation?
  • Defending against Cultural victories while trying to complete your own win, eg. science. I've tried lots of things, but short of conquest is there a tried-and-true strategy for this that doesn't risk winning culturally yourself?
  • Maps with little or no reachable tiles for needed resources, especially Oil, Aluminum.
  • Envoy/Card strategies for controlling suzerains more consistently, especially in non-domination games.
  • Keep finding that my science is way ahead of my civic research, so that my Eurekas are out of synch by at least the Industrial area. Any good guides to help rev up civic research without sacrificing other parts of the game?

Can someone test with siege towers?

Yes, in my current play through of a certain GotM I have successfully utilized embarked Siege Towers with Caravels. I actually have stopped building catapults and such in favor of 1 or 2 Siege Towers whether by land or sea. They are so much faster to deploy along with Knights and similar units compare to waiting for the walls to fall due to bombardment.
 
And Rams and Towers attached to a light cavalry unit (Horsemen, Cavalry or Helicopter) with the 4th tier promotion walk at the same speed as the said light cavalry. Neat if you've been warring around a lot (or is suzerain of Kabul).
