question: how do you win this game? do you have to take all the holy relics to the holy city or just the one you own?

You get 30000 VP's at least I think it is 30000, maybe 35000. Taking a relic to Jerusalem gets you 10000vp's so it is worth doing if you can achieve it. Getting wiped out does not help
