Sounds good, I'd like to see how Polynesia plays out. The moai is really potentially a culture machine three would produce, like you said 2/3/2.

It gets even better than 2/3/2. I just did an OCC/quick/duel map to get the feel for the Polynesian civs. As pointed out, the terrain improvement gives one extra culture for each nearby Moai. This works like Incan terrace farms and mountains.
Depending on the width & shape of your land, you can get even more:

You can get up to 6 culture yield tiles from Moai - as much as using a great artist. My capital city, on its own (not as pictured, but similarly snaky) had around 400 culture per turn when I won a cultural victory.
