So I've never played a multiplayer game like this. Can I just save and go back to my single player game?

This is only the test skadistic you don't have to save at all for pitboss, ID does that for us, all you have to do is log in everyday and play your turn then leave and carry on playing your SP games if you want remember though to hit enter and you leave the game by clicking 'exit to main menu' or 'exit to desktop' not 'retire', people have made that mistake

Quest are attached to ranodom event. I'm happy to have them on as they add a little flavor without influencing the game too much. Just remember they can be negative too
