If it helps, there is an NDA involved. None of us can legally speak of it. Only reason I'm admitting to it now is the manual being released, with the credits that you quoted.

No, it was an entirely unpaid beta. Why would we need to be paid for it?
Edit: To be clear, the Quality Assurance team was paid. The Franky Testers, however, were not.

I'd just like to say that I don't hate you guys. I am sure when I finally get to play Civ V I will appreciate the stuff you were able to contribute to make the game better.

I don't know. I know I've only really been active in it recently, honestly, but I've been a part of several major discussions. Things ranging from modding, to DLC, to design goals and balance. Been quite an experience.
