What should I be doing with the Dead Sea if it comes under my control? I mean, isn't it going to be hard to defend? The opposition is just going to sit there and heal up in one swoop. Great place for archers and siege gear. Just sit on the shore and start shooting. Any thoughts?

Well you learn on deity to kill a unit in a single turn or the bugger will heal due to advanced xp. So just act normally I guess.
A healing unit is not killing you either. Maybe an XP factory of sorts.
Never really had the issue come up. Had Dead Sea about 10 times, not a place I settle often depending on civ.
