Just started a game with Poland, they should be easy, you get 4 big & productive cities in your core:
Krakau (on Iron, on Copper would be perfect but that is covered by HRE-culture even though it is your core
)
Lvow (or what it is called, southeastern-most tile of your core)
The one in the North-East that 1NE of the Wheat
and Gdansk (?) your coastal city. Here it depends if one can win before 1700 AD or not (seems unlikely -> right river side, 2N of Krakau)
However it clashes with some existing cities, most notably Kiev & Budapest which need to be razed. I started a game where I got that far and am now on my way to conquer Vienna but despite 85-90% chance for a great spy I got a priest -.-
Not sure if I'm going to continue.
