I know the sceens shots are all about world war, and that is indeed quite spectacular, but there is something that puzzles me. The Diplomatic relations screen shot shows you have a couple of defensive pacts while you are at war with three players. How is this possible? I don't have the mod youj're using - maybe it's part of that...? In any variation I've played, any war declaration cancels defensive pacts.

I never declared war. I accepted a vassal that was at war with several people (i already knew I had loss). They declared war on me, which dragged my defensive pact partners into, but the civs that DOW'd me also had defensive pacts with some civs, who had defensive pacts with some civs, who...

That or Rhye's and Fall of Civilization changed something...

My Catapult odds vs Longbowman were 5.00 vs 13.32 with Combat Odds: 0,4%
Your Hwacha vs Longbowman was 5.00 vs 11.82 (so clearly easier fight) with Combat Odds: 0,1%.

Spain and Portugal have always been an odd couple.

This is from RFC. After an odd stream of events, Spain's vassals: Mali, the Netherlands and Portugal declare war on me. As I and Spain share a DP, Spain declares war on its own vassals! Mali and the Netherlands had enough common sense to stop being a vassal upon war declaration. On the other hand, Portugal, for some reason, stayed loyal to its master, even when the conquistadors arrived at Lisboa's gates.

What's even more hilarious is that by removing his inconsequential offer and giving him Physics, you'll be raising his diplomacy by 8 points instead of 4... I think. I've never been stupid enough to give up Physics for free, so I wouldn't know.
